Sourdough Saga: Episode 3 – good things come to those who wait!

A week ago, and with a certain amount of frustration, I stashed a very promising looking sourdough starter in the refrigerator, knowing I didn’t have a plausible baking day for another seven days.  Despite having lots going on, those seven days have been torture, in their way.  I’ve not looked forward to a day off quite so much for a very long time!

On Tuesday morning, in preparation for today’s much longed-for baking day, I ‘rescued’ my jar of starter from the fridge.  It had ‘fallen’ back from it’s bubbly heights and seemed more like a pot of goo than a bubbly ferment.  But I’d been expecting this.  I gave it a couple of teaspoons of fresh flour just for a small snack, something to munch on while it warmed back up to room temperature, and went to work.  Some promising bubbles greeted me on my return, so Tuesday night it got a proper feeding.  This had the expected – but gratifying! – result of a decent doubling in size by Wednesday evening.  Pleased that the starter seemed nice and active, I constructed my ‘overnight sponge’ on Wednesday night.

The recipe for my first sourdough loaf is a slightly modified version of one of the sourdoughs in ‘River Cottage Handbook No.3 – Bread’ by Daniel Stevens (ISBN 978-0-7475-9533-5) which has been staring at me accusingly from between it’s very beautiful covers since it first moved onto my kitchen book-shelf a couple of years ago.

My sponge consisted of the following parts –

  • A ladle-full of my (wholemeal) starter
  • 325ml of warm water (a mix of cold tap water and some hot from the kettle)
  • 250g of locally stoneground strong white bread flour

Overnight sponge, in the morningThese are mixed by hand in the bowl, covered loosely with cling film, and left to ferment overnight.  This morning, after I couldn’t bear to stay in bed any longer out of curiosity for how my bread was going, I was met with this – a lovely bubbly bowl of promising things!

I put the coffee machine on for my essential morning brew.  So distracted was I by my marvellous bubbly sponge, the jug was half-way full of pale brown water before I realised I’d forgotten to add any ground coffee!

The sponge, when I stirred it and then poured it off into a second bowl, was an amazing ‘stringy’ consistency, more like melted cheese than anything I’ve encountered in bread-making before – I assume in some way from the alchemy of the microorganisms within it.

To the sponge, then, I added –

  • A further 300g of strong white bread flour
  • 7g of salt [Edit, 15/7/2012 – I now use about half this amount of salt, with no ill effect]
  • A ‘glug’ of olive oil

Dough in the mixerAfter mixing the sponge, flour and salt roughly by hand, I put the lot into my (rather lightweight!) stand mixer, dough hooks fitted, and started it going.  It certainly gave the dough (and itself!) a heck of a work-out.  After a couple of minutes I added a good glug of olive oil and left it to work for about ten minutes.  I was told to expect quite a wet dough and certainly this was tricky to handle, sticky and rather ill-manered!  I don’t have a dough scraper so I was rather grateful for the mechanical assistance – though I’m not sure how many batches of sourdough my stand mixer has in it, it seemed to find it quite an effort!

Dough, before first riseAfter kneading, I formed it into a rough round and oiled the bowl before setting the dough in it to rest for the first time.  Before this first resting period it looks like this, and after a couple of hours, to be honest, it looked just the same, if possibly *slightly* bigger in the bowl.

Formed into a roundFlour your surface, and then turn out the bowl of dough – squash it out into a rough rectangle with your fingers, and then ‘knead’ it gently back into a tight round before returning it to the oiled bowl for another hour or so. Put the bowl somewhere warm, but not hot – on a cool day, the oven with the light (but no heat!) on makes a good resting environment.  You’re going to repeat this process of resting, flattening and re-forming your ball a couple of times during the day.

Dough, flattened with fingertips for final timeA couple of hours before my planned baking time, I turned the dough out for the last time.  It’s springier, silkier and lighter, with some noticeable bubbles now when you handle it. Form it into a round again but this time, rather than returning it to an oiled bowl, it would rather be in a proving basket.

In the ad-hoc 'proving basket'I don’t have one of those, so I used a mixing bowl lined with a clean tea-towel which I’d dusted generously with rye flour.  I had very little faith that this was going to result in anything other than a disappointing sticky mess when the dough adhered to the cloth, but I’m a good girl and do as I’m told. Covered loosely with a piece of cling film, I left this patiently for another three hours.

I’d read all sorts of advice about the critical baking process – involving dutch ovens (I don’t own one), squirty-bottles of water (likewise!) for steam creation, and even things that look a bit like chicken bricks to approximate a traditional wood-fired oven.  I went with what I actually had – a round black stoneware baking dish for the bread, and a stainless steel roaster to hold some water in the bottom of the oven.  I heated it up to it’s maximum temperature (230C on the dial – 20 below what was recommended) and pre-heated the stoneware dish.  Once it was all up to temperature, and after adding a kettle-full of boiling water to the roaster in the bottom of the oven, I tried to gently turn out the floured dough onto the baking dish.  It seemed like a bit of a disaster, to be honest – ending up rather crumpled and misshapen.  I cut a cross-hatched pattern crudely into the top, and reassuring myself it was all about the flavour, bundled it back into the blasting hot oven.

I couldn’t tear myself away from it, and ended up sat cross-legged on the kitchen floor peering through the oven door as a miracle started to happen.  First the crumpled side seemed to stretch itself back into shape, and then, I’ll be damned if it didn’t start to rise!  Ten minutes into baking and I turned the oven down to 190.  The amazing rising act continued – first, it stretched its way languorously into the slashes, stretching them nicely across the surface.  And then, it started to climb vertically upwards, lifting its edges off the baking tray.  I’ve never seen a loaf perform an act like it – I can only assume it’s the result of the clever changes to the gluten that result from the extended rising and proving time.  It was like something out of the Incredible Hulk.

Out of the oven - at last!After 40 minutes the crust was a lovely warm mid-brown colour, but the bottom was still a bit soggy.  I took it off the baking dish and returned it to the oven upside down for another 10 minutes.  Hubby came home to find me stood expectantly in the kitchen.  After that, I couldn’t wait any longer, and pulled it out of the oven.  The smell of baking bread that filled the kitchen – and the house – was quite amazing.

An hour later, we slice and sample it.  I genuinely wasn’t expecting anything this good from my first effort.  There are some lovely big holes in the dough, the crust is amazingly crisp but very thin – and retains a remarkable elasticity.

The texture of the bread is springy and extremely satisfying.  There is a definite, recognisable, but not overwhelming ‘sourdough’ flavour.  I *adore* it.  The whole process – from starting the sponge to eating the loaf – took about 24 hours, and I don’t regret one of them.  The actual ‘working’ time today was about an hour and a half, and left plenty of time for popping to the shops, taking the dog for a walk, and so on.

The bar for ‘good bread’ has just shot skywards in our household, and I suspect things may never be quite the same again.

Sourdough Saga: Episode 2 – keep calm and carry on?

So sourdough-1 went in the bin, and after a thorough clean out, sourdough-2 began…

Split starterI started initially with rye flour again, but used bottled water this time.  My initial batter was far too thin (I started with equal volumes of flour and water rather than equal weights – not quite sure what I was thinking really!), on day 2 when I got the initial bacterial bubble-up the whole thing split like curdled milk.  Thanks to some more supportive advice from twitter, I didn’t panic.  Keep calm and carry on, so they say.  Too much water, not enough flour, feed and perhaps move somewhere slightly cooler.  Done.

Do all starters get talked to this much?  Never has an inanimate object of mine been so cajoled & pleaded with.  I speak to it softly, encourage its efforts, and wish it goodnight and good morning.  My husband wonders if I’m losing my marbles… if only just a little bit!

I got my hands on some locally stoneground wholemeal flour, so I switched to this for feedings. As the batter was still on the thin side, I didn’t pause for doubling at day 3, but carried on with daily feeding.  Because the material on the sides of the jar was the first to grow mould last time, I made a habit of swilling out the jar to clean the sides at each feeding. The smell was good (quite yeasty and sourdoughy!) but only a few scant bubbles were rising to the surface.

More great advice came flooding in after I published Episode 1 of the Sourdough Saga – including the recommendation not to cover the starter.   Perhaps this was where I was going wrong, even with the lid lightly resting on the top of the jar, was I  suffocating my starter by depriving it of air?  A week after starting and not much was happening, so this seemed a theory worth pursuing.  Discarding the lid from the jar, I strapped a little kitchen-towel bonnet over the starter jar with a rubber band.  Things did start to look a bit more active on the surface of the starter at around that time.  Had I got something right at last?

The next morning dawned to apparent disaster.  Literally overnight, the whole top of my starter had bloomed with creamy-coloured velvety mould!  I was so upset I didn’t even think to photograph it.  More desperate scratching through the deeper sourdough-focused recesses of the internets ensued.  Someone promised that even really neglected starters, all moulded over, could be resuscitated – but since mine had never yet really come to life, could it work for me?  Had I perhaps caused this mouldy horror by leaving my starter uncovered for the surface to dry out?

Out of sheer bloody-mindedness, and muttering something about ‘not giving up now’ under my breath, I scratched the furry stuff from the surface of my starter as well as I could.  What was left, I mixed with more flour and water (gently warmed, this time) and tipped back into the jar.  The starter had developed a ‘winey’ smell I wasn’t at all sure I liked.  I got rid of its bonnet, reverting to the loose glass lid, turned my back on it, and leaving it without even my usual gentle words of encouragement, went out for the day, expecting to find more mould & disaster on my return.

Six hours later, you might have knocked me down with a feather.  The damned thing had bubbled up to very nearly twice the size I’d left it, and was a sponge of small even holes visible through the sides of the jar.  I nearly wept.  Instead, I swore, colourfully.  Not a trace of fuzzy mould was visible.  In fact, a better impression of all the ‘happy, thriving starters’ whose photos I’d been coveting on other, more successful blogs, I couldn’t imagine.

I tried to share with my lovely husband quite what an exciting turn of events this was.  He seemed pleased for me, also somewhat (indulgently) nonplussed.

I left it overnight, and fed it again in the morning.  Coming home from work tonight, I found it doubled again.  I can’t quite believe it.  It looks so good, but I can’t convince myself there isn’t still something wrong with it now?  I’ve fed it again this evening, getting the volume up so there’s enough to harvest for a loaf or two.  Can I just use it, soon?  What, if anything, should I be worrying about now??  It looks great, and smells great, it grows like a weed, does that mean it *is* great?  Is there any way of telling?

This whole process has been the most insane and unexpected emotional roller-coaster ride.  Is this just all sent to make me *really grateful* for my new daily bread??  More importantly, my wise blog friends, can I make a mostly-white loaf from a wholemeal starter, or should I stick to matching flour for now?  So many questions – so much to discover!

What have I learnt, that might help others trying to navigate the gloomy labyrinth of sourdough starter art and science?  Not much, to be honest!  Only that there doesn’t seem to be a one-size-fits all set of instructions.  In the end, what seemed to work for me – despite the odd speed-bump on the road! –  was nice fresh stoneground wholemeal flour, slightly warmed bottled water, and a willingness to just keep discarding and feeding day after day until things eventually came together.  My starter hadn’t read the timetable, and probably neither has anyone else’s!

Sourdough Saga: Episode 1 – failure to launch

I’ve wanted a sourdough starter for ever so long – for as long as I’ve known and understood the sourdough process, I think.  Traditionally baked sourdough is *the* great bread, by definition, in my opinion.  With its wonderful texture and complex richness of flavour, it leaves the industrial ‘Chorleywood Process’ sliced white loaf so far behind that they’re hardly recognisable as the same animal.

So when I saw that one of my favourite food bloggers, The Rowdy Chowgirl, had brewed herself up a starter recently, it made my mind up.  I was going to do it, and I was going to do it NOW.  Well, just as soon as I tracked down a bag of rye flour, anyway.  And a couple of weekends ago, after following several different lines of reading and research, I got down to business.  ‘What’s that?’ asked Hubby, as he wandered into the kitchen to see me stirring a bowl of what could only be described as goo.  ‘A sourdough starter,’ I replied.  He thought about it for a moment.  ‘You realise you’re going to have to take that thing on holiday with you, don’t you?’  I tried to reassure him that I’d read about stashing it in the refrigerator for a period of time if necessary.  He seemed unconvinced.

I broadly used the directions from The Fresh Loaf, except that I don’t have US-type measuring cups, and there’s nothing called AP flour on the shelves in the UK.  So I guessed a bit at quantities and used stoneground bread flour for the day 2 and subsequent additions.  I also used my tap water rather than the mineral or filtered water suggested – mostly on the basis that it’s nice tasting water without an obvious chlorine hit, and I brew with it regularly without adulterating it in any way, so I went ahead and assumed there wasn’t anything in it greatly damaging to yeasty beasties.

My starter was a thick batter-like consistency.  Thicker the first day when it was rye flour, and then it thinned down a bit with subsequent additions.  I used a 1l kilner jar I had lying around, with the gasket removed so that it wasn’t a sealed container, which I thought was a reasonable match for ‘cover loosely’.  I put it to rest the first day in the boiler cupboard, which is a coupe of degrees warmer than the rest of the kitchen.

After 24 hours, nothing much had happened, much as I expected.  I made the first additions with plain flour, and stashed it back in the cupboard.   It smelt… well, not exactly unpleasant, but definitely an ‘off’ smell, if you know what I mean.  But, forewarned by lots of other sourdough devotees, I plugged gamely on.

24 hours after that, it had gone mental, doubled in size, and all bubbly and awesome.  I was convinced I’d cracked it.  I even named it, Gordon.  Because, you know, ‘Gordon’s Alive!?’  Anyway, as we all know, pride comes before a fall.

Feeding timeI discarded half the mix and added more flour and water as instructed (well, kinda).  Made my mark on the side of the container as instructed, and left it a few degrees colder in the kitchen this time.

Growing, but only a littleAfter another day had passed, the mix had risen a little in the jar, but only about 1/3rd and nothing like the doubling that the instructions called on me to wait for.  So, I was patient.  Another 24 hours on and no further progress, I mixed in a few teaspoons of rye flour to help things along.  Still nothing more than a few scanty bubbles breaking surface.

Very scanty bubbles48 hours after adding the rye flour ‘booster’, I opened the jar and got a distinctly ‘musty’ damp sort of smell.  On closer inspection the batter on the sides of the jar had started growing what was unmistakably black mould.  Downhearted, I chucked the whole lot in the bin, disassembled the kilner jar and stuck that in the dishwasher.  What I’d hoped was going to be a weekend of experimental baking lost, sadly, though given the hot spell of weather that was probably no bad thing!

Some really kind feedback from @mannafromdevon, a baker on twitter, suggested that it might have been worth  trying to rescue the ‘good stuff’ from underneath, and carrying on with feeding, but it was too late for sourdough-1, condemned to the rubbish.  But their other advice, ‘Don’t Give Up’, stuck, and I’ve already started sourdough-2, which seems, so far, to be continuing in the tradition of acting as if it’s also read the sourdough primers, and wants no truck with them.

The thing that struck me most reading around the subject is that there seemed to be as many specific processes for getting a sourdough starter going as there are people who have written on the subject.  There were even (remarkably concise!) directions on the back of my bag of rye flour!  In my day job, when there are as many different ‘expert’ opinions on a subject as you can find ‘experts’ to ask, it’s usually a sign that there’s no one really good answer, just a lot of different approaches, many of which work most of the time…   Wish me luck, I’m not giving up until I get there!  This may take some time…

Adventures in Quilting – my first jelly roll, and baby steps in a new craft

A couple of weeks ago, friends introduced me to a wonderful local quilting shop, The Bramble Patch in Weedon, Northants.  All those beautiful fabrics made an impression on me, and I’ve been thinking about possible projects ever since.  Today I was back for a return visit, and whereas last time I escaped with five pretty fat quarters and a relatively small hole in my wallet, today’s visit was a bit more costly!

I came home with a jelly roll – my first *ever* jelly roll – ‘Reunion’ by Moda, a metre of quilt batting, a metre and a half of a matching fabric from the Reunion collection to use as backing, as well as a couple of necessary bits and bobs.  I love the idea of jelly rolls – little strips of lots and lots of co-ordinating fabrics.  I would never buy even fat quarters of such a wide range of fabrics, and the diminutive size of the strips (just 2 1/2 inches wide) is its own challenge.  This collection is particularly lovely – in turns fresh and colourful, classic and muted.

My project, after consideration, is a set of six place mats and a co-ordinating table runner. I hope that the small size of the working pieces and the limited scope of the project should make it one I can pull off without too much stress or anxiety!  In deference to my complete lack of prior quilting experience, and relative lack of sophisticated general sewing skills, I’ve chosen the simplest possible pattern – just stripes of colour laid next to one another, edged by turning the backing fabric to the front side.  It’s such a pretty fabric and it saves a lot of faff with binding!

This is my first place mat – the size was chosen with my narrow dining table in mind and is about 22 x 36cm.  The more observant among you will notice one doubled seam where I messed up slightly – this just adds to the cosy hand-made feeling, in my opinion, and in any case is only visible from the back.  I’ll post a full how-to in due course once I’ve finished making it up as I go along – although talk about the blind leading the blind!  The backing fabric was folded over and the corners mitred by hand before being sewn down in a single row close to the edge.  I’m quite pleased with the final result, not bad for a first effort, eh?

Piecing It Together – fabrics, quilting, and an amazing shop

I discovered the most amazing Aladdin’s cave of a fabric shop yesterday – friends took me along to The Bramble Patch in Weedon, Northants, and oh my goodness I was in heaven!  The Bramble Patch is really a quilting shop, but houses a veritable treasure trove of fabrics (including hundreds of fat quarters), patterns, kits, and accessories.  Kid in a candy store just doesn’t describe my feeling about places like this!

I’m slightly in two minds about quilting – I think the end results can be stunning – particularly some the contemporary abstract / geometric patterns, and would love to have a gorgeous family quilt and be able to say ‘I made that’.

On the other hand, I’m a quick and dirty sort of seamstress.  I can’t see much merit in taking twice as long over a sewing project to achieve perfection – ‘good enough’ is good enough for me!  Quilting – and I would love to be proven wrong here – strikes me as the end of the sewing crafts spectrum that rewards accuracy and carefulness, rather than my ‘that’ll do’ attitude!

The range of patterns and kits on offer is really quite impressive – not to mention tempting! – in particular, some very sweet jubilee and union jack cushion covers.

Fat QuartersMuch to my husband’s apparent relief, I managed to escape with only five new fat quarters for the fabric stash – what he doesn’t quite appreciate, I think, is the brain-full of ideas and inspiration I’ve come away with too!

I’m extremely tempted to go on one of the quilting courses they offer (and no doubt much more of my hard-earned cash is liable to go their way in the future!) – in the meantime I’d welcome any tips and leads on utter-beginner quilting skills & project ideas you might know about!

Hamming It Up – home-cured ham, boiled and glazed

A great ham sandwich is one of life’s special pleasures, isn’t it?  A few weeks ago I spotted a big chunk of pork leg on special offer at our local co-op.  It was too much to resist – after all the experimenting with bacon, it was time to add another pork product to the collection.  Time to make a home-cured ham!

I decided to base my cure on a Wiltshire cure, which is a traditional British cure with treacle, juniper and coriander.  The process is a bit more involved and time-consuming than dry cured bacon, but your end result is well worth it!

You will require –

  • Pork legA nice big piece of pork (ideally leg), untied from any net or string it might be wearing when you buy it.  My piece was about 1.5kg in weight.
  • A non-metallic container big enough to hold your piece of pork with some space to spare.  I used a big tupperware box I had hanging around.
  • Kitchen scales, measuring jug, pestle and mortar, and a dinner plate.
  • Curing salt – pre-mixed type such as supracure (see the Suppliers List for more details)
  • Black treacle
  • Juniper berries
  • Black peppercorns
  • Coriander leaf (preferably fresh, or dried if not)

The weight of the pork isn’t terribly important, as the amount of brine you need is as much dictated by the size of your container, and the curing time is more to do with thickness than total size.  Estimate the amount of curing brine you will require by putting the pork in the box, bucket or bowl and just covering it with water, then take the pork out and measure the water.  I needed just over 3 litres.  This is also washes any liquid or debris from the surface of the pork.

My brine was made in the following proportions – given per litre of cure for simplicity:

  • Curing salts130g of supracure
  • 90g of black treacle
  • 5g of juniper berries
  • 2g of black peppercorns
  • a big spoonful of dried coriander (be generous, and if you have fresh available so much the better)

Black treacleRemember you’re aiming for these ingredients to be included *in* a litre of brine, not added to a litre of water, so add the dry ingredients to a measuring jug and then add the water so that you can keep track of the total volumes.  You’ll need to add boiling water to the cure ingredients to help dissolve them, once they’re dissolved top up to your total volume with cold water.

Crushing juniper berries and peppercornsGently crush the juniper and peppercorns in a pestle and mortar, just enough to crack them open and release the aromas.   Add these and the coriander to the brine and refrigerate until cold.

Once the brine has cooled, add the pork, and weigh it down with the dinner plate so that it doesn’t bob up out of the brine solution.  Loosely cover the box with cling film, and place in the fridge.

Plate placed over curing hamNow, once a day, turn the meat over in the brine.  This will help the cure penetrate equally.  Very soon you’ll start to notice the meat and rind darkening as they absorb the treacle, and taking on a firmer texture.

Ham in brine after 5 daysAdvice on the subject of curing time appears hugely variable and for my piece of pork I found advice ranging from 5 to 15 days – I’ll come back to this later, but as I wanted the ham for a specific date I took a punt and went for the shortest advised curing time of five days – based on a rule of thumb of 1 day of curing per inch thickness of meat.

Cured ham, resting on plateAfter your curing time is up, remove the ham from the brine, rinse it carefully under the tap, dry with kitchen towel and place on an open plate in the fridge.  I rested my ham for just one day, because I was in a hurry to eat it – but I suggest it would be better to rest it for 2 – 3 days before cooking.

It will have completely changed appearance from the pork leg that went into the cure – the meat is a dark mahogany colour and the rind a warm brown.

You can now cook your ham however you like – I prefer to boil mine first, until it reaches an internal temperature of 70 celsius.   I changed the water after the first 20 minutes, this helps reduce the saltiness in the final cooked ham.

Then, I remove the rind, score the fat, glaze with treacle and finish in a hot oven for 20 minutes.  Once the ham has cooled (if you can wait that long!), slice and sample.

The fist thing you’ll notice is that it’s undeniably ham – it has that characteristic pink colour, and gently salty-sweet ham flavour – but what flavour, nothing but the very best traditional ham, this, no added water, none of the strange gristly bits we’re all so used to in commercial re-formed ham.  The treacle flavour is very much to the fore, a bitter-sweet deep note, and the aromatic flavours from the juniper are just about detectable.

First slice!What would I do differently next time?  I would have used more juniper, but I didn’t have enough in the cupboard.  I would definitely use fresh coriander if I had some, as this flavour was pretty much lost using the dry herb.  I would also cure for a few more days – maybe seven or eight for this size of pork leg.  Right in the centre of the ham, I found a small patch of meat that hadn’t cured through, and was the grey colour of cooked pork rather than the pink of cooked ham.  A longer curing period would hopefully have avoided this.

I might also have rested the ham for longer, and increasing the resting time might have delt with the evenness-of-cure issue by allowing more time for the cure to balance through the meat without increased curing time, but I wanted to use it to make a ham sandwiches to feed some very good friends the next weekend.  Plain, or with mustard, or pickle, the giant pile of sandwiches went down extremely well!

Waxing Frugal – making a recycled scented chunk candle

Everyone loves a candle, they cast a lovely warm flickery light, and, chosen carefully, can fill a room with beautiful scent (sure, sometimes they can fill a room with the scent of cheap pot-pourri, but this is a matter of taste!).  After Christmas, we had several left over candle ends around the house, and rather than throw them out, I wanted to do something creative and recycle them.  But while there are lots of great candle-making kits out there, I didn’t really want to spend any money on the process.  So this is a candle-making project that, with the exception of some wick and a wick sustainer, you can do entirely with things that you already have around your home and kitchen.

For this project, you will need –

  • Two old candle-ends, preferably one coloured & scented and one plain, total weight 300 – 400g
  • Empty Pringles tin (I recommend starting with a full one, and working on it!)
  • Large saucepan, a trivet (or an old saucer or side plate), and a large empty tin can (I used an empty malt extract can from home brewing, but any large catering size tin can will do)
  • Stirrer (I used a large wooden lollipop stick, anything will do but not something you plan to use with food!)
  • Chopping surface (again ideally not one you plan to use for food use in future)
  • Large knife
  • 6in length of appropriate wick, a wick sustainer, and something to use as a wick pin (a kebab stick is ideal)
  • Kitchen hob
  • Scales
  • Jam / sugar / preserving thermometer, old tea strainer (recommended but not absolutely required)

Basic equipmentGather up your equipment, starting with the knife and the pringles tin.  Cut the Pringles tin down to about 4″ high using your knife, and make a couple of ‘notches’ in the top on opposite sides of the top.

You’ll need to get an estimate of the capacity of your candle mould, so put a sandwich bag inside the Pringles tin, put it on the scales to zero, and then fill the bag with water to about a 1/2″ below the top.  The weight in grams of water is a good estimate of the volume in mls, as wax is slightly less dense than water (it floats on water, after all), you can reduce this estimate by about 10% to get the weight in wax required to fill the mould to this level. I came up with 300g and used around 270g as a target weight of wax.

Prepared waxNow, cut up your coloured candle.  Try to cut it into even cubes a bit bigger than half an inch cubed, but it’s likely you’ll struggle, and if the pieces are a bit rough, don’t worry. From what you’ve chopped up, sort to one side and weigh all the sensible chunks, leaving the dust and small fragments aside (wrap these up for another project).  Weigh your coloured chunks (mine weighed about 140g) and put them in the mould to check how high up they come. Ideally this will be about the target ‘fill’ level.  Now roughly chunk up your white wax candle.  It doesn’t matter what size and shape these pieces end up, but the smaller they are the faster they’ll melt.   When working with old candles, try to avoid including the ‘melt pool’ from the candle as this will be dirty wax and may well include bits of old burnt wick and suchlike, which you don’t want in your shiny new candle.

A word about wicks, before we go on – the size and construction of wick you need depends on the chemistry of the candle-wax and the width of the melt pool you want in your candle (which is closely related to the diameter of your candle, usually).  When working with recycled waxes, the chemistry involves a fair bit of guesswork.  I assumed the waxes were a basic paraffin pillar blend, since this is the most usual situation for commercial candles manufactured to a price point.  There’s a useful wick size guide here.  (See my suppliers list and library for more reading.)  I used an LX16 wick which should have been a good match for the ~70mm diameter Pringles mould.  Secure the end of the wick into the wick sustainer using pliers.

Melting waxNow, start melting your wax.  Put the white wax into the large tin, and put the tin inside your saucepan on the trivet.  Fill the saucepan with water so that it comes up the side of the tin about an inch and a half.  Use the thermometer, if you have one, in the water.  You don’t want this to boil, but ideally it should stay around 75 degrees centigrade, which should be enough to melt the wax without risk of overheating.  The flash-point of wax is quite close to the melting point, and at the flash point the wax is at risk of catching fire, particularly if you have a naked flame in the vicinity (for instance, if you’re using a gas hob), so be careful and heat the wax very gently.

Primed wick in situOnce the wax is melted, you need to prime the wick, which just means dipping the wick into the wax so that it can be absorbed onto the surface of the cotton.  Also dip the sustainer in the wax, and use this to secure the sustainer to the centre of the bottom of the Pringles tin.  Stretch the wick up vertically and wrap it around the wick pin to keep it centred in the mould.

Chunk candle with poured waxNow, arrange the chunks of coloured wax in the mould around the wick, trying to make sure you don’t close off any pockets which would prevent the melted wax filling all the gaps.  When you’re happy, pour about 90% of the melted wax into the mould, pouring through the tea strainer if you see any ‘bits’ in it.  Keep the remaining 10% over a low heat to keep it liquid, and continue to keep a close eye on it.

Cooling candle by immersionThe wax will shrink as it cools and this will form a dip or a ‘well’ near the wick, which will affect the candle as it burns.  Encourage the candle to cool by putting the mould inside a plastic bag and immersing it into a bowl of water.  You will need to weigh it down to keep it immersed, I used a marble pestle, but anything heavy will do.  This is of course quite faffy, and if it’s a nice cold day, you’d probably do as well to put the mould outside for half an hour or so.

As the wax sets and you start to see a well forming near the wick, make a couple of holes in this area with a skewer.  Once the surface of the wax is springy but not hard to the touch, pour over the rest of the wax tapping the mould to make sure it goes into the holes you’ve made near the wick.  Now set the mould somewhere nice and cold to set – in the fridge if it’s a warm day, or outside if it’s January in the UK.

After a couple of hours the wax will have set hard.  I was expecting to have to sacrifice the Pringles can at the end of the moulding, but the wax had shrunk back nicely from the sides, and I was able to ease the candle out without having to destroy the mould – however your results may vary and I wouldn’t lose to much sleep about it if you have to break the mould away from the candle.  Trim the wick so that about 1cm is proud from the surface of the wax.

Recycled chunk candleRecycled chunk candleI’m thrilled with the results, which I think are very pretty for a first effort.  The white wax is a little bit ‘dirty’ which I probably could have concealed by using a little bit of ivory or honey-coloured candle dye.  I poured the bulk of the white wax in two ‘goes’ and you can see the line between them, which is something I’d avoid in future.

My only real criticism of the finished candle would be that I chose too small a wick – the melt pool the candle produces is quite a bit narrower than the body of the candle, and stops short of the sides by about half an inch all the way around.  I suspect this is to do with the chemistry of the original white candle, which we stopped burning for a very similar reason – lesson learned!  If I re-make this candle with the remains of the white wax from this batch I’ll use an LX20 wick which may give a better result.  The melt pool is very pretty though, a lovely dark pink colour from the mixed waxes and gives a gentle berry aroma.  For the cost of a new piece of wick, and a little bit of kitchen chemistry, it’s a beautiful, and extremely thrifty, scented candle.

Happy New Year!

Here’s wishing all of you a very happy 2012, and hoping your new year’s celebrations went with a bang!  I should have written this yesterday, of course, but timeliness has never been one of my more natural talents (as people still waiting on Christmas cards from me will attest)!

I’m ambitious to do experiment with even more creative, country skills and crafts next year, and write about them too!  On my list is more brewing (cider, beer, and of course country wines), more curing and smoking, and experiments with sewing, crafting, recycling and thrift.  More food and recipes, of course, as well as some fruit & veg growing as the season starts to get warmer.  I also plan to write a little about my hens and poultry keeping, and to try some new crafts – at the moment I’m reading about candle and soap making, so watch this space.  Perhaps this year my Advent candle might even be homemade!

In Fermentation We Trust – apple juice turns into cider

On a lovely bright November weekend, I pressed a load of apples for cider-making.

For the next part of the process, you need to put together the following bits and bobs:

  • Your apple juice (which is already in a fermenting bucket with any luck – you’ll need the lid, if it’s one with a hole for an airlock, so much the better – if so, you’ll also need an airlock)
  • Wine or cider yeast, and yeast nutrient
  • A nice warm location at about 18 – 21 degrees celsius
  • Enough demijohns (plus stoppers and airlocks) to contain the volume of apple juice you’ve collected.  All my demijohns have come from Freecycle, so it’s worth keeping your eyes open.  For recommendations of UK homebewing equipment suppliers, see the suppliers list.
  • A syphon
  • Homebrewing steriliser solution

Now, time to turn your wonderful juice into cider (for any Americans who might be reading, we mean hard cider – the traditional alcoholic sort).  Traditional ‘real cider’ makers would do nothing with it at this stage, and wait for the natural yeasts which you hope are already present on the apples to do their job and get fermenting.  There is an alternative approach which involves using campden (sulphite) tablets to kill off the wild yeasts and then adding some wine or cider yeast of your own, which with any luck should guaranteed a ‘clean’ culture of your chosen yeast strain.  I decided to go a third route, didn’t use any campden, but did add wine yeast and yeast nutrient to give the process a ‘kick-start’ and make sure that an appropriate culture was at least in there with a fighting chance!

Apple juice before fermentation

You should probably take the specific gravity of your apple juice before you start fermenting, as this will tell you something quite important – with a bit of arithmetic (or there are online SG to ABV calculators out there you could avail yourself of) you should be able to work out how alcoholic your cider ends up.  This is relevant both for keeping your driving licence, and for making sure your cider contains enough sugar, and therefore after fermentation, enough alcohol, to keep well.  You’re aiming for a minimum of about 3.5% ABV, real ciders can easily get up to about 8%.

I didn’t test my juice (do as I say not as I do, right?), but it tasted nice and sweet so I think it’s likely my cider is about the 6% mark. Invest in a glass hydrometer (they’re cheap, easy to use with a bit of practice, and ever such pretty bits of old-fashioned looking laboratory glassware), you won’t regret it!

Fermenting by the fireThere is lots of advice that you should ferment your cider under lock.  I didn’t have an airlock capable bucket available so just kept the lid loosely on.  My experience from beer brewing is that the CO2 produced during fermentation will give a good blanket over the brewing liquor, being heavier than air, and oxidation shouldn’t be a problem at this stage as long as you don’t disturb the fermenting juice.  If your bucket does have an airlock, after adding the yeast and nutrient close the lid tightly and set up the airlock.  If it doesn’t, just fit the lid loosely so that the gas produced during fermentation will be able to escape without blowing the lid off!  Put your bucket in a nice warm place and try to avoid peeping.  Mine went by the fire in the living room for the first few days, as we were having a bit of a cold-snap.

Ready for rackingYou’ll be able to tell fermentation has started when you see bubbles through your airlock, or when a nice loose foam starts to form on top of your apple juice (because you’re not peeping, right?).  During fermentation, the dead yeast and quite a bit of the solids from the apple juice will settle out in the bottom of the bucket, and the colour of the juice changes from brown to a yellow-orange.  In general, the cider will not clear completely, but it will be brighter than it was before.

Top fermenting yeastOnce fermentation seems to have stopped (I gave mine a generous month), you’ll have a nice thick layer of debris on the bottom of the bucket with cider above it.  Now it’s time to ‘rack’ the cider into demijohns for bulk conditioning.  When I opened the bucket, I found rather an alarming-looking layer of yeast floating on the surface of the cider.  I can only assume that this was a wild, top-fermenting yeast strain, as it seems to have done nothing awful to the cider so far!

Clean and sterilise your equipment (demijohns, syphon, stoppers & airlocks) carefully this time, following the directions on your steriliser.  Now the cider has fermented you risk accidentally making cider vinegar if acetobacter bacteria were to get in.  It’s also important to avoid introducing oxygen into the cider at this stage – acetobacter need oxygen to make vinegar from alcohol, so even if there’s some contamination they’ll struggle to get going if the cider stays free of air.  Syphon carefully, keeping the outlet of the syphon below the level of the liquid and avoiding introducing bubbles.  Then fit your stoppers and airlocks and put the cider in a cool dark place to mature for a few months before bottling. Keep an occasional eye on your airlocks to make sure they’re not drying out.  I expect to leave mine in the demijohns until spring, and will then bottle into champagne bottles with a bit of priming sugar to make sparkling cider.

Filled demijohnsWe had a couple of pints more cider than fitted in the demijohns, and it would have been inconceivable to waste it – I can report that it is, already at this stage, definitely cider.  It’s a bit rough around the edges with quite a hard tannin that hopefully will mellow a bit with maturation, but has a lovely fresh apple aroma and definitely shows promise!

Hard Pressed – making real cider, the old fashioned way

Apple harvestAt the end of October, a lovely holiday in Cornwall yielded an unexpected bonus – three sacks of apples from the orchard where we stayed.  There was only one thing to do – make cider!  Only one problem – I didn’t have a cider press.  We’ve been faffing about building one for the last couple of years, but hadn’t got round to it.  A bit of pleading and cajoling later, and I’d managed to score a brand new apple press for an early Christmas present – what a result!

Ben's Red applesOf course, apples don’t just press themselves.  Real cider making – unlike most of the country skills in this blog – is time consuming (and good exercise!).  Set aside a nice sunny autumn day, and if you can talk some friends into coming around to help, so much the better.

For an idea of how much apple juice you’re likely to produce, we got a yield of just over a gallon per bag of apples – the bags are the sort you buy logs in.  It’s possible that with more practice and different equipment we may have done slightly better, but I doubt there was much waste.

As well as apples – lots of apples, all different sorts if possible – you will require:

  • a cider press – bought or home-built
  • a robust bucket, and a crushing pole (or a proper scratter, but they’re expensive) – we did try a cheap plastic bucket from B&Q but caved the bottom in very quickly, so ended up using a carefully washed old metal wastepaper bin
  • a large bucket for washing apples in – I used a big garden trug – and clean water
  • knife and chopping board
  • sieve / colander and muslin for straining
  • bucket or demijohn for collecting the juice
  • wine yeast and yeast nutrient (optional)

A quick note on sterility, first.  Home-brewers are obsessed with sterilising things.  I am not washing my apples in camden to kill off wild yeasts, my ingredients (the apples) and tools (wooden equipment and press components) will not be sterile.  But do wash everything very carefully in hot soapy water (not the apples, obviously), and rinse them carefully before using.  There is general advice to avoid metal tools and receptacles when cider pressing – we used a metal bin for crushing in the absence of any alternative – it was enamelled and in good condition, and does not appear to have caused any obvious problems, I suspect because the apples and juice were not in contact with it for very long.

Washing applesIf you have time (and let’s face it, if you’re planning for next year, time is on your side!) there are various plans for DIY presses on the internet, or have a look at some old-fashionned presses, they’re quite simple things really.  I was going to build something using a car jack for the pressing mechanism.  My lovely bought press has a 6l capacity which seems about right for domestic production – the bottleneck on our two-man production process was the crushing stage.

Chopping applesStart by washing your apples in the big bucket, you can do this quite a large batch at a time.  Then slice the apples up into quarters or eighths, discarding any obviously bruised or damaged areas.  Transfer these a batch at a time into your crushing bucket.

Crushing pole - end To crush you could use something like a new clean round-section piece of timber, we bodged a crusher together out of a small piece of inch-square timber we had and a plum-wood log, trimmed and stripped of it’s bark and formed into a blunt wedge at the end.  Avoid using anything which has been treated with timber preservative as it will be in intimate contact with your apples.  Make sure the pole is long enough that you can use it in a comfortable standing position above your bucket, or you’ll hurt your back and shoulders.

Crushing applesNow crush your apples to a rough pulp, until they’re making a wet squelching noise when the pole goes down and there’s just some free juice in the mixture.  The aim is to make it easy to extract the best juice yield you can from your precious apple harvest, so do put in the effort here, our first batch was definitely under-crushed and we got much less juice from this than from subsequent ones.

Loading cider pressNow load up your press.  Mine has a mashing bag to retain most of the solids within the press, some will use muslin cheeses or other approaches.  Once the press is loaded, apply pressure slowly, building it up over a few minutes, rather than trying to get the press as tight as possible straight away.

Cider press in useCollect your juice into a bucket through a  muslin to take more of the solids out.  It’s ok to taste some juice at this stage (and it should taste absolutely awesome!).  It will look… well, dirty brown coloured, probably.  This is a result of being hardly-filtered, and the tannins in the apple juice reacting with oxygen.  Don’t worry about this.  The leftover apple pulp (‘pommace’) can be fed to livestock, or composted.  My hens loved it, but be careful not to overdo it.  The rest can be composted.

Pressed juiceAt some point you will run out of daylight, apples, or energy.  At this stage you’re done.  Admire the juicy product of your labours.  At the moment you have unprocessed, unfiltered, unpasteurised apple juice.  Smells marvellous, looks decidedly suspect.
